In our culinary tradition, this type of starch is not yet very common, and this is mainly due to availability. Cheaper potato and corn starches for many seem to have no alternative – why buy a more expensive variety with about the same qualities. However, it has excellent consumer and taste qualities, so it is worth trying if possible.

In industrial production, tapioca flour is mainly used as a thickener. Often manufacturers do not even write about a specific type of starch. You can identify it by the prefix "modified", or rather by its absence. Cassava starch never contains such an addition. In our country, it is customary to add it in the process of preparing a variety of sauces, usually not from a low price category.

A separate topic is the use of this product in medical nutrition. On the shelves of domestic supermarkets, you can find a large set of such products, including "healthy" bread, gluten-free pastries, jams, etc. Tapioca starch may well be used in the production of these products – read the label. It can also be purchased in its pure form. Unfortunately, it is not implemented in all major retail chains, not to mention more modest supermarkets.

In home cooking, you can try to prepare traditional kissel using tapioca flour. Its taste will be more pure and" unadulterated", and the consistency will be exceptionally uniform. More experienced cooks can add this thickener to puddings, creams, mousses, etc. In Asian cuisine, it is customary to add tapioca flour to minced meat or fish. It connects fine without the addition of eggs and precious meat juice when cooking is lost is much less. On the same principle, you can "link" fruit and berry filling for a variety of pastries. It will not give the extra liquid to the dough, and the" healthy status " of the finished dish will increase somewhat.

Tapioca can also be used in the preparation of exotic soups, including cold ones. For example, green pea soup is very tasty with such a thickener. In dietary cuisine, tapioca can be used in cooking vegetable stews. They are usually not very high in calories, and the feeling of hunger returns very quickly, leveling all the benefits. Just a couple of spoons of tapioca flour in the process of stewing will give the dish the effect of a much longer satiety, without adding a critical value in calories.
