The perennial plant stevia, which belongs to the Asteraceae family, has gained some popularity among adherents of a healthy diet, who use it as a substitute for ordinary sugar. Oddly enough, stevioside has found use in the production of salty products in which stevioside suppresses the unpleasant taste of table salt (sodium chloride). The combination of stevioside with salt is commonly used in the production of foods such as pickled vegetables, dried seafood, soy sauce, and "miso".
Stevioside is also used in certain beverages, in the production of sweets and chewing gum, baked goods and Breakfast cereals, yogurt and ice cream with stevia, cider and tea, as well as in toothpastes and mouthwashes. Another important commercial niche of stevioside is its use as a table sugar substitute.
As we have already noted, stevioside is quite stable under the conditions of temperature regimes used in food production, which, if its organoleptic parameters are acceptable, allows us to consider stevioside and its analogues as possible sweeteners in the production of most food and beverages.
With the use of stevia extracts, it is possible to obtain food products of the "Clean label" category, that is, products that use only natural ingredients in their production.
