Tetranatria pyrophosphate TSPP E 450(iii), English Tetrasodium Pyrophosphate, is the sodium salt of pyrophosphoric acid and has the formula Na4P2O7. It is a white crystalline powder or granules without smell. It is quite hygroscopic. Easily adsorbed. It is well soluble in water and almost insoluble in ethyl alcohol. Its aqueous solution is stable at a temperature of even 70 C. When boiling the solution, it turns into two-substituted sodium phosphoric acid.

Raw material for the production of tetrasodium pyrophosphate by the method of chemical synthesis are phosphoric acid and soda ash.

Tetrasodium pyrophosphate TSPP slows down the course of oxidation processes in foods, thereby increasing their shelf life.

Tetrasodium pyrophosphate finds application in many branches of food industry. So it is added to fruit juices to prevent turbidity, in the meat industry it is used as a moisture-retaining additive, as well as an adhesive and separating meat fractions substance. In the dairy industry, it is used as a stabilizer for ice cream, cheese and other dairy products, preventing color changes.

Additional applications of tetrasodium pyrophosphate can be attributed to its use in the oil industry as an additive in drilling mud and as substances that prevent corrosion.
