Additive E 516 belongs to the functional group of stabilizers-emulsifiers of food products. This is a natural substance: the calcium salt of sulfuric acid. In its natural form, it is formed in sedimentary dehydrated gypsum deposits (anhydrite). It can also be in the form of a dihydrate (gypsum, Selenite). The level of concentration of calcium sulfate in water determines its natural hardness. For industrial use, the product is obtained by chemical fusing of calcium chloride with potassium sulfate. The calcium sulfate precipitates as sludge.
The high hygroscopicity of the substance allows it to be used as a desiccant in the production of spices, dried mushrooms, vegetables, sauces, milk and other products. Calcium sulfate is a multifunctional additive. As an auxiliary substance and an additional source of macronutrient, it is used in the production of the following products: canned tomatoes, including those cut into slices: it seals the structure of plant tissue, increases resistance to heat treatment, and contributes to the preservation of useful substances; wine to change the acidity of grape must (used mainly by French winemakers); homemade cheeses, cottage cheese, tofu as a filler: accelerates the formation of a high-quality clot, improves the texture of the product; beer to stabilize the pH level of malt jam; bakery products (added to flour to improve its quality, protect against microbial damage, increase the elasticity and plasticity of the dough); frozen fish products (for example, crab sticks): it is applied to dry ingredients for binding; baking yeast as a nutrient for microorganisms. Calcium sulphate is a salt substitute in dietary nutrition. Calcium sulfate in the form of dihydrate is widely used in medicine. On the basis of gypsum, fixing bandages are made for the needs of surgery. For a long time, the substance was the main material for impressions in dental practice. An interesting application of the e 516 additive was found in the cosmetics industry. The substance as a plasticizing component is part of the popular alginate masks based on seaweed. Diluted with water, the powder quickly hardens on the face. After the procedure, it is removed like a rubber mask. Another application is nutritional thermal masks. The combination of dry calcium sulphate with water forms a homogeneous viscous mass that is applied to the face or body. When solidified, it warms up independently. This helps to open the pores, accelerates the penetration of active substances into the cells of the epidermis. Calcium sulfate is often used in scrubs as an abrasive and decorative cosmetics (matting agent).
