Sodium acetates (food additive E262) is the sodium salt of acetic acid (E260). In the food industry, E262 is used as a preservative, acidity regulator, and flavoring agent. Sodium acetate is used in the manufacture of various dyes and chemical derivatives such as: vinyl acetate, acetic anhydride, in the preparation of electrolytes, when dyeing and tanning leather.In the food industry, E262 is used for preserving vegetables and fruits to soften the taste of acetic acid. In addition, by adding sodium acetate along with calcium acetate in a small amount to flour, manufacturers protect their bakery products from the "potato disease" bacteria (Bacillus mesentericus). E262 is also used as a flavoring agent in the production of chips, giving the product a slightly acetic taste and aroma.
